The cast iron filet is to die for. A year ago on my husband and I's honeymoon, I ordered the filet and my husband tried it and was instantly envious of my delicious meal. A year later we are still thinking about it and had to visit Rosemary again for our anniversary just so we could eat the filet again. It is seared in duck fat until it is browned and crisped to perfection. The Center is juicy and full of flavor. We also can't stop thinking about the perfectly cooked broccolini and amazing mashed potatoes. This is truly a dinner that will leave you dreaming about it for years to come.

Paradis is one of those places that makes you feel like you've stumbled onto something special. The atmosphere is effortlessly charming — warm lighting, thoughtful décor, and that unmistakable Rosemary Beach sense of ease that makes every meal feel like a mini vacation. But let's get to the point: the snapper. If you go to Paradis and don't order the snapper, you've made a serious mistake. This is a dish that stops conversation at the table. The fish is cooked with absolute precision — a beautifully crisp, golden sear on the outside giving way to tender, flaky, melt-in-your-mouth flesh underneath. It's the kind of preparation where you can tell the kitchen genuinely respects the ingredient and isn't trying to hide behind heavy sauces or overwrought plating. The seasoning hits every note — bright, clean, and perfectly balanced, letting the natural sweetness of the fish shine through. Whatever accompaniments they pair it with only elevate it further. I've had snapper at dozens of coastal spots across the Gulf, and this one stands in a class of its own. It's the dish I think about days later, and the reason I'll keep coming back. The rest of the menu holds up beautifully too, and the service is warm without being overbearing. But seriously — get the snapper.
